Kimchi Grilled Cheese Is Our New Favorite Sandwich

Just when you thought a grilled cheese sandwich couldn't get any better, the universe (and by universe, I mean a genius food site called Food Republic) comes along and drops the kimchi grilled cheese on us, which for food lovers everywhere, is great news. If you happen to recall that horrid obligation called middle school you may have experienced in sad years past, you also remember the utter euphoria that was arriving back home eight hours later. Trudging into the house after a long day's awkwardness and algebra was a reward, because home always equaled food. You had your cereal bars, your fruit snacks, and then you had the next level stuff of miracles; the veritable mecca of after school snacks: the grilled cheese.

Now, decades later, the kimchi grilled cheese has come along as the sandwich to end all sandwiches. You can thank me later. Perhaps with a few more recipes?

Recipe site Food Republic has garnered nothing less than widespread adoration after sharing an Instagram post of this delightful quasi-Korean concoction of untold carbs and fat with the world, recipe included. It's actually very friendly for those of us who are more culinarily challenged; just grab a country loaf, a cup of jarred kimchi (spicy pickled cabbage), some cheddar cheese, and get grilling.

As a true Millennial, though, I couldn't help but wonder what else is out there. As someone who takes grilled cheese pretty darn seriously, I decided to do some important research — and as it turns out, when it comes to the wild and wacky world of fantastic, over-the-top grilled cheese flavor combos, you ain't seen nothing yet.
