It's National Pancake Day, which means it's time to talk seriously about what it is you're making for breakfast. If you ask me, whipping up a plate full of pancakes is probably the best way to start off your morning. This hasn’t been scientifically proven or anything, but I’m like almost positive that it’s a fool-proof method. Who can resist a bunch of flattened cakes covered in butter and syrup? No one. No one can resist this.
Pancakes take a few minutes to make, so it’s understandable if you’re more of a I’ll-Just-Grab-A-Yogurt-So-I’m-Not-Late-To-Work-Thanks person. I am one of those, for the most part. But on Sundays? I like to take time with breakfast. I’ll use up all the fruit I bought at the farmers market and never ate because I’m terrible. I’ll find a bag of semi-sweet chocolate chips I had been meaning to use for cookies. I will find all the bacon I have and I will bake it, because pancakes are even better with a plate of smoky, applewood bacon on the side.
Besides, it’s a holiday dedicated entirely to pancakes!
