How To Make Mini Ice Cream Cakes — VIDEO

by Jenna Wexler

If you haven't heard by now, Pillsbury® has just released Girl Scout Cookie™-inspired baking mixes. Yes, you heard that right, and yes, you should be very excited. These flavors are unlike any other, and now that those delicious, nostalgia-filled favorites are mixes, the dessert opportunities are pretty much endless. So, in "it's 100 degrees in the city" summer fashion, I decided that I would use the Girl Scouts® Thin Mints® cupcake mix to make mini ice cream cakes — aka the ultimate treat for your next summer barbecue.

In just a few simple steps, you can make individual ice cream cakes with tools that you already have in your kitchen. Plus, the box mix does half of the work for you and the flavor combinations that you can try are only as limited as your imagination. The cupcake mix also comes with this super decadent ganache mix that drizzles like a dream over your mini cakes. The combination of rich Thin Mint-y cake, cold creamy ice cream, and rich chocolate is undeniable. Even if you aren't a Pinterest pro, you'll look like you are and impress all of your friends (if you can find the willpower to share). Check out the video below:

Note: One box of Pillsbury® Girl Scouts® Thin Mints® Cupcake Mix yields 24 mini ice cream cakes.
